Everything Bagel Bombs

Ingredients
1 Pound Refrigerated pizza dough
2 Tablespoons Butter
5 Eggs, beaten
Kosher Salt, to taste
Ground Black Pepper, to taste
1 Cup Diced ham (about 6 ounces)
1 Cup Shredded cheddar or other melting cheese (4 ounces)
Everything bagel seasoning
Bagel Boil Liquid
3 quarts Water
1 teaspoon Kosher Salt
1 Tablespoon Baking Soda
2 Tablespoons Honey
Directions
Divide the pizza dough into 8 even pieces and roll each one into a ball. Cover them with a kitchen towel or plastic wrap, and allow them to rise for 20 minutes.
Meanwhile, melt the butter in a large nonstick pan over medium heat. Season the eggs with salt and pepper to taste. Cook and scramble the eggs until they're done to your liking, then remove the pan from heat and add in the diced ham and shredded cheese.
Preheat the oven to 425°F/220°C. Line a nonstick baking sheet with parchment paper.
Gently flatten the balls of dough with your palm, and top each one with ⅛ of the egg mixture. Pull the sides of the dough up and around the filling and pinch the seams to seal. Place the balls seam-side down on the lined baking sheet and cover them with a kitchen towel or plastic wrap. Let the filled bagel bombs sit for 15 minutes.
While waiting, fill a large pot with 3 quarts of water and bring it to a gentle boil. Add the salt, baking soda, and honey to the boiling water. (Don't let the water boil too strongly to prevent the bagel bombs from ripping open.) Place a few of the dough bundles into the gently boiling water and boil them for about 1 minute (turn them over halfway through). Remove them with a slotted spoon and transfer them to the lined baking sheet. Repeat with the remaining bagel bombs.
Top each bagel bomb with everything bagel seasoning and bake them for 25 - 30 minutes, or until they're golden brown and cooked through.
Serve warm, or let them cool to room temperature, wrap them individually, and freeze them for later.

Using pre-made pizza dough is a big time-saver, too — there’s no yeast, and no kneading. (Because guess what? Pizza dough and bagel dough are basically the same thing, only pizza dough is slightly less sweet — which makes sense for this recipe, since we’re filling these bagel bombs with savory ingredients.) Then boiling gives the buns that nice, chewy bagel texture and glossy exterior.

Fill them with your favorite breakfast foods. We went with classic ham, egg & cheese, but anything you’d eat in an omelette would be perfect: sausage or bacon; veggies like spinach, diced bell peppers, or mushrooms; or any kind of cheese you can think of. Not an everything bagel fan? Top your bagel bombs with sesame seeds, poppy seeds, dried onion flakes, or even just sea salt.
