Freeze & Save on Deli Meats

Submitted by: anonymous  02/21/2009 10:16 AM

If you see a good sale on salami, then stock up because it can be frozen. My kids love it...I buy low-fat salami so I don't feel bad about it and it doesn't get yucky from being frozen. Saves me money when they want a deli sandwich and I don't want to waste cash at Subway.

great idea, since you can get a foot long dax salami or pepperoni at family dollar for a dollar.

The grocery store in my area CONSTANTLY has pre-packaged deli meats, bacon and sausages on clearance, they have to sell before the sell by date. I am getting packages of lunch meat for 50 cents each, bacon for 1.00 and sausages both ground and polish/ brats for 75 cents to a dollar. They have to sell by that date but if frozen, they will last several months longer. The deli meat is great for adding to omelets, pizza, quesedillas or just for sandwiches.

One thing I like to make for breakfast is to take a can of Grands biscuits, pull each uncooked biscuit in half, place half of them in a casserole dish, top with diced lunch meat, a few scrambled eggs, onions, mushrooms and such and cheese. Then place the other half of the biscuits on top. Sprinkle with parsley leaves, parmesean cheese, garlic powder and shredded cheese and bake until browned on top for easy breakfast biscuits. It helps clean out the frig of the little bits of this and little bits of that as well and helps to serve my whole family when I only have 2 eggs left and a handful of other stuff.

The polish sausages are good in spaghetti, potato and minestrone soups as well as for grilling and the ground sausage is good to mix with hamburger for hamburgers, meatloaf and chili. I scour the isles for all kinds of sell by date sales and when paired with a coupon can get alot for free.

I like to get croutons and grind them up for bread crumbs for adding to meatloaf, using as a breading for fried foods and casserole topping like tuna casserole and such. I also grind up the left over chips crumbs or stale chips to add to this breadcrumb mix- it makes chicken strips taste sooo good when there is a hint of cheese puffs or doritos in the mix. Do be careful when using corn chips as they get a burnt flavoring when too stale.
