Vinegar For Cleaner Produce

Submitted by: sal  03/04/2009 11:48 AM

Here is a tip I picked up from Cooks Illustrated. A few years back they did a study to find out the best way to clean your produce. They tried antibacterial soap, scrubbing, cleaning with water cleaning with a mixture of vinegar and water.

They found that using vinegar worked best, removing 98% of the bacteria. So now what I do is fill a spray bottle with 1 part vinegar (they said you can also use lemon juice) to 3 parts water and I just keep it under the sink. When I need to wash a smooth skinned fruit or vegetable, I simply spary the item with the vinegar water and then rinse it under water to rinse the vinegar. For leafy vegetables or something like broccoli, I soak them in a pot with the vinegar solution for about 2 minutes.
