Long Live the Celery - Quick Tip

Submitted by: Marilyn Arseneau  04/03/2009 12:39 PM

I must admit, I am somewhat lax about the proper storage of fresh vegetables. Very often, I have a few stalks of celery left, but their droopy, flaccid condition is unappealing.

Now, I know there are those among us who wash everything as soon as they get it home and re-package, but I am not one of them. But the other day, I got an "a-ha!" moment: why not just chop what you need off the end of the bunch (after rinsing under the tap) and re-tie the bag with a twistie? (unless you need long, perfect stalks for some reason). Sure, you'll be left with a gnarly stump at the end, but -heck- you're gonna use that for soup anyway, right? And the celery stays fresh and crisp as you work your way down the bunch.

I can't believe it's taken me 40 years to figure this out, but better late than never!

Store celery in aluminum foil for longer life. Then you can use any size stalks.

I store mine in aluminum foil and what I know will not get used fresh, I freeze in a Ziploc bag. I know the flavor of the frozen celery won't be as strong, but is still works for soups/stews. My guys refuse to eat celery, so I add it in large pieces so that it can be removed from the pot after it's given the dish all of its "love."
