Save Time & Money with a Large Roast

While a roast of any sort may feel like a large purchase, pound for pound it makes sense for those of us who still believe that meat is an important part of a well balanced diet. Leftovers can be used in casseroles, soups and stews, saving time and money.

Mom would cook a huge roast in the presser cooker on Sunday and serve only a small portion (if it's not on the table you won't eat it, we never went hungry).

Monday shreaded with BBQ sauce on bread with baked beans, Tuesday Beef and noodles, mostly noodles and a salad, Wednesday shreaded with gravy over mashed potatos, she would make a casserole with what was left with lots of veggies and biscuits on top.

She could do the same with chickens, she would cook up 2 or 3 in the oven.

Mom was big on portion control 40 years ago, less meat more veggies, meat and meat juices were for flavor. We were the healthiest kids on the block.

With Easter coming up there would have been ham, then ham, green beans and potato's, then ham, white beans and corn bread, ham chopped in omelets with veggies and left over rice, cooked spaghetti cut in 1 inch pieces or noodles.

I was a single mom and learned to do this and still do just because it is so much easier to cook once and eat several times off that meal.

I freeze the leftover beef or chicken for those nights when I need a quick meal or what ever I did set out is still frozen solid at dinner time. It also conserves energy from the stove/oven and ME !!! :)
