My go to recipe is requested at every pot luck dinner I attend. It is my family's Italian Sausage, Potatoes and Peppers. It is easy and fantastic. Here's the recipe:

Italian Sausage, Potatoes and Peppers

1 lb of pork or turkey italian sausage cut into 1 inch pieces
4 large potatoes sliced about 1/4 inch thick
1 large green bell pepper, sliced into strips
1 large onion, cut into chunks
4 cloves of garlic crushed
2 tbls dried sweet basil
salt and pepper to taste

Layer all the ingredients in a 9 x 13 baker. Sprinkle with seasonings and mix to coat all the sausage and vegetables. Bake in the oven at about 400 degrees for 40-60 minutes. You can put it under the broiler for the last 5 minutes if you want it crispy. If you are using turkey sausage, you may want to add a little olive oil to the pan. The turkey sausage tends to be a little dry, so it will need the oil. If using the pork sausage, there is enough fat in the sausage to give the meal flavor and moisture.

If you want to make it more thrifty and to feed more of a crowd, just add more potatoes, peppers and onions. You can also add sliced carrots if you like. I hope you enjoy.

For a simple dinner that I can cook ahead of time and is easy to make in bulk, I make a chicken tortilla soup. best for a casual dinner party and everyone loves it. you can make it as spicy or mild as you want. Here is a serving for 6:

2 large chicken breast with bones
1 large can diced tomatoes (I get fire roasted but you can use any kind)
1 red onion, chopped
1 green pepper, chopped
1-2 jalopenos (depending on how spicy you want it)
1/2 bag frozen corn
2 cloves garlic, minced
1 c. chopped cilantro
1 cup shredded cheese, any variety
4 wheat tortillas

Put chicken breasts in a dutch oven, drizzle with olive oil, salt, pepper and cayenne pepper and cover, bake on 400 for 40 minutes, meanwhile, chop everything else up and get it ready for cooking.

When the chicken is done, take the breast out and set them aside, then put the dutch oven on the stove and sautee the peppers, onions, garlic and corn(they'll soak up all of the chicken stock)

Chop up the chicken and once vegetables are tender add the tomatoes and chicken to the pot.

Then slice up tortillas into strips, drizzle with olive oil and salt and bake on 400 until crispy.

serve with chopped cilantro, cheese and tortillas.

Sirloin or Filets topped with mushroom sauce

*Salt and pepper steaks (cut about 3/4 inch thick)
*Place about 2 TBS butter and a little olive oil in a skillet
*Heat
*Sear steaks to desired doneness
*Remove and keep warm
*Saute mushrooms in remaining butter/oil
add balsmic vinagarette and a can of beef broth (you mayhave to add flour to thicken).
*Heat, reduce sauce.
*Pour steak drippings into the mixture
*Return steaks to sauce one thickened.
*Serve with masked potatoes if desired.

A beautiful and delicious elegant meal. NOT hard to prepare and not terribly expensive either

Our favorite for a group is fairly cheap and simple. brown a large quanity of hamburger, amount depends our the size of the crowed, add onions and green and red peppers chopped, to the meat and cook until soft, then add one can chili with beans for every 2 people.(we buy them on sale) In a separete skillet, fry corn tortillas until soft in corn oil, 2 for each person. chop a large bowl of lettuce and another of tomatoes, and a bowl of chopped green onions. grate up at least 2 or 3 pounds of chedder cheese. Lay 1 tortilla on a plate, then a big scoop of chile then another tortilla and more chili now add big handful of grated cheese, then lettuce, then tomatoes, serve with hot sauce or salsa and cold beer, you will have everyone so happy,-- never meant anyone who didn't love this dinner!

Fried yellow rice, all the way. Cook rice with turmeric the night before, and fry in peanut oil with any or all of the following ingredients: Red or green bell pepper, chopped green onions, chopped Vidalia onions, mushrooms, frozen green peas--thaw 30 seconds in the microwave before adding; small shrimp, good quantities of fried, drained ground pork and shredded scrambled egg fried with garlic; shredded lettuce, shredded leftover beef roast; minced ham.

Toss with a tablespoon or two of black sesame oil before serving.

Although the initial expense is a little higher and you need to use your oven, nothing beats a turkey with whatever side dishes you please because there are so many different uses for the left-overs (planned-overs) and you can eat all week if you make a big enough turkey.

I usually get an extra one when they go on sale for Thanksgiving. Some uses for the left-overs are the obvious sandwiches (either cold or as a hot turkey sandwich with mashed potatoes and gravy, turkey tettrazini, turkey enchiladas, turkey soup, or anything else you can find in a cookbook or online. Hands-down this cook's favorite for a crowd!

Can't go wrong with Pasta a la Caprese. We got this recipe out of a cookbook called The Clueless Vegetarian (which I highly recommend even for meat-eaters who would like to add a little more variety to their meals). The nice thing about it is that, since you prepare the sauce ahead of time, you can just start the pasta when your guests arrive and have dinner on the table in 20 minutes with minimal fuss. Oh, and it's delicious.

Chop up 8 fresh plum tomatoes, 1/2 red or yellow bell pepper, 1/4 cup fresh basil (do NOT substitute dried basil), 2 cloves garlic (actually, we seldom limit ourselves to 2). Toss this all together with 1 tsp. salt, 1/4 tsp. black pepper, and 1/2 cup olive oil, and let it sit for 1-3 hours at room temperature. Then boil a pot of water and cook up a pound of short pasta (such as penne or shells) until "tender but not mushy." Drain it, dump it into a serving bowl, then dump the sauce on top of it, along with 2 cups of shredded mozzarella. Toss it all together quickly, and voila! Dinner.

All you need is a green salad to round out the meal.

Green Onions
Chili
Ham
Broccoli
Cheese (grated or nacho cheese sauce)

This is a quick and easy dip for taco chips;

15 ounce can Hormel chili without beans
8 ounces cream cheese

Combine both in a pot, and heat until cream cheese is completely melted, and the dip is warm.

I am not sure this is as much cheap, as it is quick and very tasty. If invited to a party, we will often go with the ingredients and small pot, and prepare it when we arrive. We also bring along the chips.

For a quick last minute appetizer for unexpected guests, I take a slab of cream cheese, display in a pretty dish with sides, add fig preserves (or any flavor on hand), use the fun spreaders and serve crackers in another dish.
People LOVE it!

Some assorted cheese slices (slice it yourself), assorted grapes (different colors, with stems cut into serving sizes, and assorted crackers never fail to please my guests. And the leftovers provide my lunch for the next day!
