Have the Butcher Grind Select Meat for You

I came across this great tip from a former (maybe still current?) butcher and author and writer. He suggests that instead of buying ground meat that is already packaged, you look for boneless chuck of some sort or boneless rumps and then have the butcher grind it up for you. In addition to the meat itself being very good and flavorful for hamburgers (or other meals involving ground beef), it’s typically cheaper (it was a difference of a couple of dollars a pound on my most recent visit to the supermarket). In addition, I have heard that the ground meat that you buy ready to go in the meat section (packaged ground beef) comes from large batches of beef, which can increase the chances of the beef containing ecoli and other diseases. Plus, with the ground meat, you never know what other scraps or items they’ve thrown in with it.

I’ve also heard that you can get sirloin steak or pork shoulder ground up and it will be good and better than the already packaged ground beef. I’ve also heard of people doing this themselves at home (something I’ve never tried but if you’re industrious, then go for it). The experts suggests that you buy meat either already cut into one inch pieces or you do it yourself and then put it into your food processor.

this is absolutly right. StaterBrothers had top serloin steaks for 1.99 a pound on a three day sale. Hamburger was going for 2.25 a pound. The butchers don't seem to mind a bit.

I don't know about putting meat in a food processor... unless you want meat paste. Go find yourself a hand cranked grinder that you can attach to your kitchen table. The grinders come with different sizes of holes, try a larger one for terrific chili ground meat (better texture and flavor). Make this a family project to grind up enough pounds for a month or two; your kids might groan now but it will be a terrific memory that they will tell their kids.

i agree, I do this too it is cheaper and my butcher doesn't mind either.
