10 Money Saving Appetizers (myrecipes.com)

Submitted by: leigh67  05/20/2009 4:19 PM

I hosted a cocktail party for about 20 guests and did not want to spend too much money and found a great list of affordable appetizers on myrecipes.com. if anyone is looking to save money on entertaining--this is a great resource. These are the four apps that I served-so good:
  • Ham & Cheese Skewers - dice apples and toss in lemon juice so they don't turn brown. just skewer a cube of ham, a leaf of arugula, spinach, or watercress, a piece of diced apple and a chunk of blue cheese with a toothpick or skewers if you have them. Makes a pretty display

  • Pizza Sticks - this was a huge hit! take 1 12oz refrigerated thin pizza crust top with 1 container of tomato bruschetta topping and sprinkle 1 cup of shredded italian cheese blend, on top, bake for 12 min. and cut in strips. serve right on the cutting board for an authentic pizzaria feel. These went fast.

  • Mini Caprese Bites - another party favorite! slice grape tomatoes in half, cut small mozzarella cheese balls into thirds, and make a sandwich between the tomoato and the cheese and place in a shallow dish or bowl. mix olive oil, balsamic vinegar dash of pepper and salt and thinly sliced basil leaves, then drizzle over the tomato sticks. cute and healthy.

  • Warm Rosemary Olives - mix 6 cups of mixed olives (they recommend nicoise, spanish, picholine and greek)with 5 sprigs of fresh rosemary and 2 tsp of red pepper flakes and place in the sent of a large sheet of aluminum foil, heat over to 400F and bake 30 min. serve warm

I didnt' try the other 6 recipes, but they looked good too:
  • Garlic and Sun-Dried Tomato Hummus
  • Cherry Tomato Toasts
  • Peach-&-Blue Cheese Bites
  • Garlic Pita Chips
  • Monster Meatball Sandwiches
  • Potato Nests w/Sour Cream & Smoked Salmon

The Caprese Bites sound like they could actually be kind of expensive (around here, at least, fresh mozzarella is quite pricey, and so is fresh basil when it's out of season). The Pizza Sticks, on the other hand, could be extra frugal if you made your crust and topping from scratch instead of buying them ready-made. If you have a bread machine, making pizza dough is easy. I've heard it's pretty easy to do in a food processor, too.

leigh67 for Warm Rosemary Olives--'place in sent' should be 'place in center' of large sheet of aluminum foil. Also, 'I didnt' should be 'I didn't'. Sometimes we forget to check our spelling before posting suggestions or recipes to the world. Thanks!
