Wedding Cake Idea - the More the Merrier

One of my dear friends and I got into making cakes for birthday parties and events and had a lot of fun decorating them - no plain frosted cakes here! So when it came time for her wedding, instead of having a cake made, she asked ten of her close friends to make a cake to bring to the wedding. There were no restrictions, anything goes!!

It may sound a bit unconventional, but it really was lovely and added an incredibly personal touch to the wedding. Friends brought all sorts of cakes: the bride's favorite birthday cake, a tower of cake made of rice krispie treats, a platter of cupcakes, a chocolate rum cake (everything is better with rum) and all sorts of really creative cakes that were clearly made with a lot of love. My friend and I made a cake and decorated it with south african flags (where the groom is from) and american flags (where the bride is from). It was really a lot of fun and allowed her girlfriends to be a part of the wedding. The only hard part was choosing which cake to have!!

This is similar to what we did for my daughter's wedding. We were trying to figure a way around a traditional wedding cake, which would have been very expensive. For a while we thought about a cupcake tree, because I could bake those in advance. But then one day she suggested we just skip the cake altogether because neither she or the groom really cared for cake. Instead we did a "dessert bar." In the weeks prior to the wedding I baked a variety of desserts that I do well: three pies, pies, three cakes, ladder coffee cakes, a blueberry buckle, and pumpkin-nut rolls. I froze these things. I aimed for a visual variety, and also a variety of flavors. I also centered some desserts around frozen garden produce. The evening prior to the wedding I thawed all this stuff out, then also made the frostings and filling I needed to complete the cakes. I also prepared the elements I needed to make a trifle. On the morning of the wedding I got early and put together the trifle, then filled, frosted and drizzled. A couple other guests also brought for the dessert bar, and so there were also little cheese cakes and cookies. It was fun to watch wedding guests fill their plates with samplings of several interesting desserts. It seemed to me that this was enjoyed far more than a single slice of wedding cake.

I'd like the idea of all white cakes, of the same size. Maybe a little more elegant.

When I got married my aunt did my wedding cake. Actually did did four...three sheet cakes, chocolate, white, and pumpkin, and a round multlayer cake, the top was like a topper for our first year aniversary (marble cake...I thought that was creative). They were decorated with flowers and really were beautiful...and better than any wedding cake I've ever had. They also didn't cost $500 like my sisters a few years later.
