Order cake for no more than half of the guests at your wedding. While you might think that’s risky, just ask caterers how much cake actually gets consumed at weddings. You’ll be surprised, as the I’m willing to bet the answer will be along the lines of “not much”. It’s a shame, as so much planning and money goes into the wedding cake, but it’s really more for show than for eating. Save yourself some money and get a smaller cake.
You can also instruct your caterers/servers to cut small pieces so the serving size is smaller per person if it looks like cake is more popular than you estimated (and remember, often times cake is served to everyone even if they didn’t ask for it, and a lot of people won’t touch it if that’s the case or will just push it around their plate. I think you’ll find that most people won’t mind a smaller piece.
If you’re really worried, have a few sheets of the cake available in the back in case there’s more interest in cake than what’s available with your actual wedding cake on display. It will be cheaper to have a smaller cake and a few sheets of the same thing on hand than getting a large cake.
