Homemade Aunt Jemima Pancake Mix Recipe

4 cups self-rising flour
4 cups baking mix(recipe will follow)
1 cup sugar
1 cup non-dairy creamer
stir together in a 16 cup container with lid,store in refrigerator for up to 3 months, makes 14 cups
Pancakes
1 egg
8 oz clear soda(7up)
1 3/4 cup mix
mix in blender or food processor for 1 min.
1/3 cup batter per 6' pancake

Baking mix
5 lb. bag self-rising flour
2 cups butter Crisco(or shortening of your choice)
mix 'til it looks like course cornmeal
use like Bisquick
store in refrigerator for months

Anyone know if it works to actually use Bisquick to make this mix, rather than make the mix suggested? The baking mix recipe is just too big for my family and refrigerator.

Yes Arlene, you can use any baking mix of your choice.If you don't have Bisquick or don't want to make a large batch of baking mix use 2 3/4 cups of self-rising and 3/4c shortening.Mix 'til it looks like course cornmeal and it will work the same as bisquick.The pancakes are delicious!!Gale
