Spaghetti Ideas for Quick Meals

Submitted by: pam weinstein  10/18/2009 5:56 PM

I buy the whole grain, omega 6 pasta from bartillo- it has about 6 grams of fiber, 5-8 grams of protein and omegas. I buy the cappellini (angel hair). I cook up a big batch and keep it in my fridge. I take the cooked cappellini, butter, and frech BABY spinach- just put in a skillet and heat, that's it.

There are lots of variations on the above theme. I take leftover chicken(even fried) and pull the white meat out and add it to my spinach spaghetti. I've tried white tuna-I put it on top AFTER i cook the spinach spaghetti. I might put in a can of baby peas or a can of mixed vegetables. Sometimes i use a shredded 4 cheese combo on top, too. It is filling and delicious and nutritious.

I also put the cappellini in my soups to add extra fiber & protein. I love Bartolli's cappelini because i like pasta but it generally doesn't have a lot of nutritional value, but i feel like i am eating a nutritious meal when i use this product.

I only cook for myself and don't enjoy it much, but i don't always want to eat out or just eat frozen and processed foods. This is so easy to do, even i'll cook it. I also like the fact that i can add it to a can of soup and increase the fiber and protein.

another easy pasta dish i make a lot is pasta primavera, just take whatever veggies you've got, peppers, onions, broccoli, spinach, mushrooms and saute them w/ a little olive oil and then add a small can of diced tomatoes and simmer. You've got a great homemade sauce....

Spaghetti Carbonara is the only spaghetti all my family will eat. After you have cooked and drained the spaghetti, pour a beaten egg on top coating the strands. Move fast.. Garnish with bacon bits and cheese. The original recipe has cream and panchetta, but this works as well.
It used to be that every pantry always had bacon, eggs and spaghetti on hand. Now I am not so sure.
