This is a favorite recipe I have used for many years.
Supper Pie
Crust
2 cups dry stuffing mix
1 cup water
1/3 cup salad oil
Combine ingredients until moistened. Press into a 9" pie plate, forming a
high-edged crust. Bake at 400 degrees about 20 minutes.
Filling
1 10 0z. can cream soup (chicken, mushroom, or celery)
1/2 cup milk
3 eggs, beaten
1 1/2 cups cut up leftover turkey
some chopped onion, parsley, salt and pepper to taste.
Combine all ingredients and blend well. Pour into crust and bake an additional
25 to 30 minutes.
I always save the wishbone. After cleaning and
drying I decorate it with gold paint, glitter, or whatever. Some have been left
plain. I attach a tag with the date and names of those who shared our turkey.
These are used as Christmas ornaments, and are a wonderful reminder of family
and friends.

This is my favorite for lefte over Turkey, you can do it for one or more if
you wish.
Twice Baked Turkey Potatoes
Serves: 1, preheat oven to 350 degrees, preparation time: less than 10
minutes
1 potato, baked (scrub well before baking) and cut in half
1/2 cup cooked peas or veggie you like….I like peas
1/8 to 1/4 cup milk
4 oz. cooked and chopped turkey
butter, to taste
Herbs and spice you like….I love Mrs. Dash salt free
Scoop out potato pulp, mash with enough milk for a creamy consistency, and fold
in peas and turkey. Heap into potato shells, bake for 10-20 minutes until hot.
If a crispy top is preferred, broil potatoes for the last few minutes of
cooking. Serve with butter and seasonings to taste.

I will make turkey salad (like tuna or chicken salad). I will use about two
cups of diced turkey, 1/3 cup light mayo, 1/3 cup light sour cream or plain
fat-free Greek yogurt, diced celery, diced onions, and chopped walnuts, along
with a couple of good shakes of Crazy Mixed Up Salt or other favorite seasoning.
It's very low fat, and very healthy. If I want to zing it up a bit, I will add
about 2/3 Cup of peeled, diced apples. YUMMY!

We always make a pot of turkey soup. Leftover turkey gravy, celery, onion,
carrots, egg noodles and chopped turkey. Serve with fresh rolls. Fast &
easy way to warm up after all that shopping! Save the money you would have
spent dining out for your Christmas gifts :)

Don't overdose on leftover turkey! SAVE at least half of the leftovers for
later by freezing it in broth. To make a hearty broth: in large stockpot, cover
turkey carcass with water. Bring to boil, then add 1 tablespoon white vinegar
-it draws minerals out of the bones. Simmer 1-2 hours. Place turkey in freezer
containers, cover with broth, and freeze for up to 8 weeks. Use the rest for
soup. Larger portions frozen this way can even be used for sandwiches.

I buy a really big turkey just for the leftovers. My family loves to have open
faced turkey sandwiches with mashed potatoes and leftover gravy; Then I make a
creamed turkey over toast, and finally I boil the carcass and make a turkey hash
soup with potatoes, onions, celery, and the broth.

I have two cats who are just over 14 years old each. They are on a very
expensive Iams brand cat food for older, sensitive cats because they cannot
tolerate any additives to their foods. When Iams had a huge recall I could no
longer get their brand. I started grinding white meat turkey and chicken meat
with a little water and serving them that as an alternative to their wet food.
It worked great! No regergitated piles! Turkey meat will freeze. Your
leftovers can be used for sensitive or older animals.

I like to make Turkey Tetrazinni! It's a very "loose" recipe, you
can change it up however you like. The basics:
Cook enough spaghetti to cover a 9 X 13 baking dish. Let it cool somewhat. Beat
2 or 3 eggs in a bowl, along with your favorite seasonings, salt, pepper, onion
powder, etc. Pour evenly over spaghetti. Bake @ 350 degrees for about 5
minutes to set the egg, and hold the spaghetti together.
Make a sauce, on your stovetop, with chopped-up turkey, a couple cans cream of
chicken soup, throw in some of your favorite veggies (corn or peas work
especially well) maybe add some sour cream. Pour this over the spaghetti, and
return to oven long enough to heat through. If you want to give it an extra
"touch" crumble left-over potato chips or bread crumbs over the top
before baking.

Disguise it - make chili! Finely chop leftover turkey in food processor.
Saute onions - add chopped turkey and lightly brown. Add other ingredients -
tomatoes, beans, peppers, chili seasoning.

Definitely Chicken Enchiladas! Cut up left-over turkey, mix with chopped
onion, 1 can of cream of chicken soup, 1 cup shredded cheddar and/or jack
cheese, roll up in tortillas and place in a casserole dish. Top with your
favorite salsa and more shredded cheese and bake for 30-40 min. @ 350 degrees.
Serve topped with sour cream and avocado.

sandwiches to take to school, soup with veggies and leftover meat, and some,
inevitably, will go to the pet rats! My little babies need their protien.

There usually isn't much left after Thanksgiving. ;-) Throughout the year I
routinely bake turkey because it's so easy, and it's good for you. After baking
and cooling, I cut all the meat from the bones and freeze it in family sized
portions. These can be thawed and eaten plain or in a variety of recipes.

We take all the leftover meat off of the bones and chop it up to use in soups
and salads. Then we make a big pot of stock with the remaining carcass. We use
the stock in soups and in place of chicken stock in other recipes, such as
chicken marsala.

Last year my mom made an AMAZING casserole using leftover stuffing and turkey.
It was delicious!
One of my other favorite leftover uses for turkey is in sandwiches. First we
usually just throw some turkey in a sandwich with lettuce, mayo, mustard, and
cheese. But then for a change you can make a turkey salad sandwich. Mix up
pieces of turkey with mayo, mustard, onions, celery, and any seasonings you
like.

I make a turkey pie in a foil pie pan to put in the freezer. I start with
leftover stuffing for the crust. Then I add chunks of turkey, other leftover
tidbits like corn and cranberry sauce. hen I pour some gravy over that. Then I
spread mashed potatoes over that and sprinkle cheese over all. Then wrap it up
and freeze it. Yum!

I make turkey ala king. Make a basic white sauce, add some chopped turkey and
some left over veggies or some frozen peas and carrots(the small cubed type).
Then just heat it up and it is great over toast or biscuits or left over brown
and serve rolls.

Shredded cheese
layer turkey, steamed broccoli, gravy, and cheese in a 9x12 casserole dish.
Bake at 350 Degrees for 30 minutes. Serve over rice.

I make a turkey hash. I start with fried potatoes. Then about 5 minutes before
they are done I put in diced chunks of leftover stuffing and turkey. Season with
sage and pepper. Fry until everything is crisp. This is really good the morning
after with a couple of fried eggs.
