Don't Throw Away Overripe Fruit

Instead of throwing away overripe fruit, I like to whip them up into a fruit smoothie—perfect with those slightly brown bananas or strawberries. Usually just add a little orange juice, yogurt, water and ice. And if I am not in the mood for a smoothie at the time I throw the fruit into a ziplock and toss it into the freezer to save for later.

Once a banana starts getting brown polka dots, my kids won't touch them. I put them in the freezer peeling and all. When I am in the mood to make banana bread, I pull some bananas out of the freezer and let thaw on the counter while I wash the morning dishes. The peeling prevents the fruit from getting freezer burn, and when thawed they are very mushy and don't need mashing.

I use the banans for banana bread and donate it to the assited living center where I work seams like that is the only fruit I get to much off

Frozen bananas.. My 4 yr old loves them frozen, healthy snack in the summer months.

I also freeze overripe bananas to make banana bread. My recipe calls for 3 small or 2 larger ones. I cut them up for the portions I need for a recipe and bag them separate. I then put several in a heavy duty freezer bag. Then I take out what I need when I bake.

My kids love old bananas used for banana snack pancakes. Using your favorite pancake recipe (or mix) blend 1/2 the milk called for in your recipe along with one over-ripe banana and 2-3 Tablespoons maple syrup per cup of flour. Stir this into your dry ingredients and add a little more milk if it's too thick. Cook in 2in circles--perfect size for little hands and no sticky mess since the syrup is cooked in. Freeze leftovers for later snacks.

It's easy to make applesauce in the blender. Just core the apples, you can leave the skin on (for more nutrition), add a tsp. lemon juice, adding sugar is optional. Cut the apples into chunks. Blend with the lemon juice until it is your preferred consistency. I like to add cinnamon, as well. It's quick and easy, nutritious, and you can use up your bruised or 'old' apples.

I core and cut apples then freeze and use for pies.

I also cut vegetables and freeze. I thaw and use them in spaghetti or other dishes.
