Common Ingredient Substitutions for Your Recipes

We all know how annoying it is when you go to make a recipe and then realize you're one ingredient short at the last minute. Heather from Want What You Have, who has been cooking for a family for almost 25 years, has been in this situation many times before an has developed some tried and true substitutions for such occasions.
Here are some of her great substitution ideas from the Baking Substitution section of her post:
- Baking chocolate, unsweetened (1 square) - 3 tablespoons baking cocoa + 1 tablespoon cooking oil
- Baking powder (1 teaspoon) - 1/2 teaspoon cream of tartar + 1/4 teaspoon baking soda
- Brown sugar (1 cup) - 1 cup white sugar + 1 1/2 tablespoons molasses
- Cornstarch (1 tablespoon) - 2 tablespoons all-purpose flour
- Eggs (1 whole) - 2 tablespoons oil + 1 teaspoon water
- Sel rising flour (1 cup) - 1 cup all-purpose flour + 1 1/4 teaspoons baking powder + 1/4 teaspoon salt
