Rotisserie Chicken - More Meals Than One

I buy at least one chicken when I'm shopping at Sam's Club. Our family of four finishes off most of the chicken at supper. Or, so it looks. After everyone has eaten, I can still usually get two cups of meat off the bones. I freeze this and save it for chicken pot pies, chicken enchiladas, and sometimes chicken soup.

Typically I also cook the carcass with water and veggie ends, a little chicken stock and make a broth. If I'm making soup, I'll make it now, using meat I've picked off the bones after stock making (there's always some left it seems).

We can usually get three meals out of each chicken - at least. And, I buy them at Sam's for $4.99 a chicken. For me, they are a real deal!

Yum! I plan to purchase one of Wal-Mart's rotisserie chickens on my next outing there. As I am currently undergoing cancer treatment, I don't have the energy to do much cooking from scratch--however, relying soley on takeout and convenience foods is too costly. The chicken will eliminate several steps from cooking while still yielding a variety of tasty meals. Good tip!

If you are not a big eater, buying a tray of appetizers is sometimes the answer. Keep in the freezer and take out what you need to thaw. I find that Sams usually had a good selection. I also do that with desserts.

Another way to have four meals with one whole chicken. Fry the parts, breast, legs & etc. Then use boney parts for dumplings the next day.

I don't care for white meat. So I eat the thighs as two dinner meals (with a packet of frozen vegetables), the two drumsticks at one meal either lunch or another dinner and cut up the white meat for curry.

The rotisserie chicken is also great using about half of it shredded (it is already seasoned) place on a split croissant roll (also great at Sams), add sliced avocado, raw purple onion rings, add dressing of your choice, we use mayo and you have a fabulous gourmet sandwich. (use mini croissants for a party sandwich tray) Serve with some of that soup or raw veggies and chips and it is a full meal.
